***I tried two Italian restaurants that the locals suggested & recommended as being excellent - they sucked. Well to be fair - none of them were from NY or NJ. I cook better Italian.

***When talking to several transplanted New Yorkers & Jersey locals they had the same thing - pizza, bagels & Italian suck. They also lamented the lack of a good car wash. I was also told to learn to live without a dry cleaner.

*don't use NY water for one thing - there is only one decent bagel place near my mother in Florida that does it right - trucks in NY water in 55 gallon drums several times a week

*the second way is to bake them instead of "kettling" them - this involves boiling rather then baking - crisps the outside leaving the inside soft & moist..........
