I pulled 2nd place in the Fort Worth Cowtown Chili Cookoff in the 80s. My catfish is always appreciated. My shired eggs always garner many comments.my 5 Alarm Shrimp Creole is notorious (bring an extra hanky, you will be breaking into a sweat, and your sinuses will drain). My eggplant casserole always gets raves, as well as my steamed spinach.
Hand battered onion rings (the secret is homemade vanilla ice cream), and my tenderized roundsteak Chicken Fried Steak are always very popular as well
( cooking was my bread and butter- ha ha - for 30 years
